What's for Dinner?
A few people have asked me for an example of what we eat since we have so many children, and it's rare to find a large family household that eats a low-fat plant based diet.
At church, a few of us women are having a fitness challenge and we have to keep a food journal for the next 8 weeks.
While that idea was being formulated, I was also thinking of an idea of my own, making a daily food report to serve as a sample menu for my blog, so that when someone says they like to eat a vegan diet, but don't know how to go about it. I think sample menu would really help such families or individuals who need ideas on how to get started.
Our fitness challenge starts January 14th and goes for 8 weeks. If I am able to keep up my food journal/menu plan here on this page, it should serve as a really good example!
January 14th
Breakfast Oatmeal with 1/2 cup cherries, and 1/2 cup blueberries, 1/8 currants
Snack Cold leftover mixed vegetables with Ginger Vinegar
Lunch 2 cups roasted brussel sprouts
Snack 1 banana and two more coups of brussel sprouts
Dinner Mixed Vegetable Salad with vinegar, Cauliflower Pasta

* Mixed vegetable salad is simply two heads of romaine lettuce cut up in small pieces and many different kinds of fresh veggies of your choice cut up in small pieces, plus 1/4 cup raisins or currants, and a can of drained garbanzo beans. I use infused balsamic vinegars for dressing. No fat at all in the salad.
